Puff pastry is flaky and delicate, so it should be handled lightly. Keep fillings modest so the pastry can rise well.

Ingredients

  • Ready-made puff pastry dough
  • as desired Filling of your choice
  • as desired Za’atar
  • a little Za’atar oil
  • as desired Ketchup
  • as desired Mortadella
  • as desired Kashkaval cheese
  • as desired Chopped olives
  • as desired Bell pepper
  • as desired Mushrooms
  • a little Butter
  • a little Ashta
  • a little Honey
  • a little Sugar syrup
  • as desired Aleppo pistachios
  • as desired Kiri cheese

Instructions

  1. Lay out the two sheets of ready-made puff pastry on the work surface, keeping each piece apart from the other, and remove the paper separating the pastry layers.
  2. Leave more space between the pieces of ready-made puff pastry intended for different fillings on the baking tray so that the flavors do not mix.
  3. After draining off the oil, place the za’atar over one portion of the ready-made puff pastry on the baking tray.
  4. Spread ketchup over another portion of the ready-made puff pastry on the baking tray.
  5. Mix the mortadella with the Kashkaval cheese, then distribute the mixture over the ready-made puff pastry on the baking tray.
  6. Over the ketchup-covered ready-made puff pastry on the baking tray, distribute the pizza filling of chopped olives, bell pepper, mortadella with Kashkaval cheese, and mushrooms, leaving a small gap around the edges so the filling does not escape during baking in the oven.
  7. Preheat the oven to 200 with top and bottom heat on for 15 minutes before placing the baking tray inside.
  8. Grease the small mold or metal lid used for shaping with a little butter before shaping the sweet portion of the ready-made puff pastry.
  9. Cut the ready-made puff pastry intended for the sweet filling into four sections on the work surface.
  10. Press the pieces of ready-made puff pastry into the small mold on the work surface until they take on a neat shape.
  11. Arrange all the filled pieces of ready-made puff pastry and the pieces intended for the sweet filling on the baking tray.
  12. Place the baking tray first on the lower rack of the oven so the pieces cook from underneath.
  13. Move the baking tray to the upper rack of the oven if the pieces need browning on top, monitoring the baking according to the strength of the oven.
  14. Remove the ready-made puff pastry pieces from the oven once they are cooked on the bottom and top.
  15. After baking, fill the sweet pieces with ashta by making a hole in each piece on the serving plate.
  16. After filling the sweet pieces with ashta, garnish them on the serving plate with honey or sugar syrup, then Aleppo pistachios.
