Beef Kebab at Home

This is a homemade beef kebab recipe made with 1 kilo of fatty meat, finely chopped onion, chopped parsley, salt, and black pepper. The chef prefers kneading the meat well and shaping it onto skewers or into pieces/patties, then grilling it on a heater grill or its home alternatives. It is served with saj bread, piyaz onion salad, and grilled vegetables; lemon and salt are added to the piyaz three minutes before serving.

Kebab usually needs well-seasoned meat and careful shaping before grilling or cooking.

Ingredients

  • 1 kilo fatty meat
  • finely chopped onion
  • chopped parsley
  • salt
  • black pepper
  • saj bread
  • pepper paste
  • local oil
  • onion
  • sumac
  • tomato
  • chili pepper
  • lemon

Instructions

  1. In a large bowl, combine fatty meat with an onion finely hand-chopped, washed chopped parsley, salt, and black pepper.
  2. In the mixing bowl, knead the meat well with the onion and parsley until the mixture holds together and becomes cohesive.
  3. In the refrigerator, leave the kebab meat for one day beforehand to rest.
  4. On wooden skewers, shape the meat around the skewers, wetting your hands with water as you shape it.
  5. On the skewers, press the meat with your thumb and forefinger, then shape it evenly, leaving an indentation as you work around it.
  6. On a plate, the meat can also be shaped into a round patty or a regular kebab piece if skewers are not available.
  7. On a tray or grilling surface, arrange the kebab skewers, leaving a small space between them.
  8. On the heater grill, or in a frying pan if the heater grill is unavailable, grill the kebab skewers until they sear on one side, then turn them to the other side.
  9. On the heater grill, also grill any remaining meat shaped into patties or regular pieces if skewers were not used.
  10. On a grill, heater grill, or air fryer, grill onion, tomato, and chili pepper for serving.
  11. In a small bowl, mix the onion with sumac to prepare piyaz onion salad.
  12. Three minutes before serving, add the lemon and salt to the piyaz onion salad so it does not wilt.
  13. On a serving platter, spread out the saj bread and distribute pepper paste, local oil, onion, sumac, and parsley over it.
  14. On the serving platter, place the grilled kebab, grilled vegetables, and piyaz onion salad over the bread.
  15. On the serving platter, serve the dish hot.
