
Brain with Lemon and Garlic
A cooked brain dish seasoned with lemon and garlic.
A cooked brain dish flavored with lemon and garlic.
Like a simple offal dish with a bright, garlicky sauce.
Cook gently so the brain stays tender and does not break apart.
Ingredients
- 3 Brains
- 1 tablespoon Butter
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Ground coriander
- 1/2 teaspoon Paprika
- 1 tablespoon Salt
- 1 Medium onion

- as called for in the recipe Green bell pepper
- as called for in the recipe Red bell pepper
- as called for in the recipe Coriander
- as called for in the recipe Lemon juice
- as called for in the recipe Olive oil
- 2 tablespoons Vinegar
- as called for in the recipe Black peppercorns
- as called for in the recipe Coriander seeds
- 1 Cinnamon stick
- as called for in the recipe Bay leaves
- as called for in the recipe Loomi (dried lime)
- as called for in the recipe Cardamom
- as called for in the recipe Cold water
- as called for in the recipe Pinch of salt
- 2 leaves Bay leaves
- 1 Loomi (dried lime)
- 1 Cardamom pod
Instructions
- Put the cold water in a pot, then add the vinegar and a pinch of salt before turning on the heat.
- Place the brains in the pot with the cold water and let the pot heat up with the brains until the scum rises.
- Skim off all the scum from the surface of the pot when the water begins to boil.
- Add the black peppercorns, coriander seeds, cinnamon stick, bay leaves, loomi, and cardamom to the pot after skimming off the scum.
- Leave the brains in the pot over the heat for about 20 minutes, depending on their size, until cooked.
- Drain the brains from the pot after boiling.
- Slice the onion into rounds on a cutting board.
- Slice the green bell pepper and red bell pepper on a cutting board.
- Slice some of the garlic on a cutting board, and crush another portion of the garlic for later use.
- Heat a little olive oil with the butter in a frying pan.
- Add the onion, bell peppers, and sliced garlic to the frying pan, then add a pinch of salt and stir the ingredients in the pan.
- Divide the brains in half, then arrange them with the vegetable mixture in a baking tray or ovenproof dish.
- Brush the tops of the brains with butter in the baking tray or ovenproof dish.
- Place the tray in an oven heated from the top only at 200°C, until the brains are lightly browned.
- Leave the tray in the oven for about 5 minutes only.
- Heat a little olive oil with the butter in the frying pan so that the butter does not burn.
- Add the crushed garlic to the frying pan and stir it quickly.
- Add the lemon juice and coriander to the frying pan with the garlic at the final stage.
- Place the brains on a serving platter, then distribute the lemon, garlic, and coriander mixture from the frying pan over them.
- Serve the brains hot with the onion and bell pepper mixture.
