
Cabbage Rice
A rice dish cooked with cabbage.
Like a simple rice pilaf with cabbage.
Cook the cabbage until tender, then mix it with the rice so the flavors combine.
Ingredients
- meat
- 2 cups (300 g) rice
- ½ teaspoon black pepper
- 1 tablespoon salt
- ½ teaspoon ginger
- 1 teaspoon cumin
- 2 tablespoons ghee
- 6 cloves garlic
- lemon juice
- 1 head of cabbage (quantity to taste) cabbage
- lukewarm water for soaking the rice
- 1½ cups for every 2 cups of rice hot water for cooking
Instructions
- In a bowl, soak the rice in lukewarm water for 30 to 45 minutes.
- Heat the ghee in a pot over the heat.
- Add the meat to the pot and stir until it is almost cooked.
- Add the salt, black pepper, ginger, and cumin to the pot, and stir the ingredients with the meat.
- Add the chopped cabbage to the pot and stir it with the remaining ingredients until it wilts, then reduce the heat and cover the pot.
- Add the garlic to the pot after the cabbage has wilted.
- In another small pot over the heat, bring the hot water to a boil.
- Add the soaked, drained rice to the main pot and stir it with the fat, meat, and cabbage until it absorbs the flavor.
- Add the boiling water to the main pot, using 1½ cups for every 2 cups of rice.
- In the main pot, raise the heat at first and leave the pot covered until the water dries up.
- In the main pot, reduce the heat to the lowest setting, then cover the pot with cellophane and leave it for one-third of an hour.
- In the main pot, uncover after the time is up and check for doneness.
- When serving, add the lemon juice to the serving dish.
- When serving, sprinkle with black pepper if desired.
