Chicken Madghoot

A spiced chicken and rice dish known as Madghoot.

Like a seasoned chicken rice one-pot meal.

This is typically a one-pot style dish, so the chicken and rice are cooked together with spices.

Ingredients

  • 2 kg chicken
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ginger
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon seven-spice blend
  • 1 teaspoon crushed garlic
  • 5 green cardamom pods
  • whole peppercorns
  • cinnamon stick
  • bay leaves
  • 3 cups long-grain rice
  • 1/4 cup vegetable oil
  • 2 tablespoons animal butter
  • 1 tablespoon tomato molasses
  • 2 dried limes (loomi)
  • 1/2 cup tahini
  • medium onion, chopped
  • 1 cup chopped tomatoes
  • 2 hot green peppers
  • 1 tablespoon grated ginger
  • 1 tablespoon tomato paste
  • substitute for butter ghee
  • 4 1/2 cups water
  • a pinch salt
  • approximately just under 2 kg chicken, cut into thighs and drumsticks

Instructions

  1. In the pot, brown the chicken pieces in the animal butter or ghee until colored on both sides, then set aside.
  2. In the same pot, sauté the chopped onion with the ginger and garlic until softened.
  3. In the same pot, add the spices: cumin, ginger, curry powder, and seven-spice blend, along with the cardamom, whole peppercorns, cinnamon stick, and bay leaves. Then add the chopped tomatoes and tomato molasses or tomato paste, and add the dried limes (loomi).
  4. In the same pot, add the tahini and stir it together with the ingredients.
  5. In a separate pot or bowl, bring the rice water to a boil, using 4 1/2 cups as stated by the chef.
  6. In the same pot, add the browned chicken, then add the soaked rice, washed well.
  7. In a pressure cooker, pressure-cook the dish for 9 minutes as stated by the chef, then release the pressure and serve hot.
