
Chicken with Vegetables
A simple chicken dish cooked with vegetables and basic ingredients.

Like a straightforward chicken skillet or stew.
Cook the chicken through and keep the vegetables tender but not mushy.
Ingredients
- Cut chicken
- Potatoes
- Onions
- Carrots
- 1 tablespoon Salt
- half a teaspoon Ginger
- half a teaspoon Curry
- Cardamom pods
- 2 tablespoons Safflower
- 3 leaves Bay leaves
- 4 breast pieces or 3 breast pieces + 4 thighs Chicken meat from the thigh and hip / thighs and breast pieces
- a squeeze Lemon juice
- 2 tablespoons Broth
Instructions
- Cut the potatoes, onions, and carrots into large pieces in the pot or on a cutting board.
- Heat the frying pan or pot well over the heat before starting.
- Place the chicken pieces in the frying pan or pot and brown the first side until nicely colored.
- Sprinkle the salt over the chicken in the frying pan or pot after turning it from the first side.
- Add the chopped vegetables over the chicken in the frying pan or pot.
- Add the spices to the frying pan or pot: ginger, curry, bay leaves, and cardamom pods.
- Add hot water to the frying pan or pot once it begins to boil.
- Stir the ingredients in the frying pan or pot from time to time so the flavors meld.
- Add the safflower to the pot after grinding it or rubbing it with a little salt, then distribute it over the ingredients.
- Cover the pot and leave over medium or medium-high heat until the chicken and vegetables are cooked.
- When serving, add 2 tablespoons of broth and a squeeze of lemon juice to the dish.
