
Crispy Fried Fish with Tahini Sauce
Crispy fried fish served with tahini sauce.
Like fish fillets with a sesame sauce dip.
Ingredients
- 5 fish, each weighing 250 g Fish
- 1.5 tsp Cumin
- 1.5 tsp Ground coriander
- 1 tsp Salt
- 1 tsp Sweet paprika
- 1/2 tsp White pepper
- 6 cloves Garlic
- Juice of 1 lemon Lemon juice
- 1/2 kg All-purpose flour
- 1/4 kg Breadcrumbs
- 1 tsp Cumin
- 1 tsp Ground coriander
- 1 tsp Salt
- Water
- 1 Egg
- 1 tbsp Vinegar
- for frying Vegetable oil
- 4 tbsp Tahini
- 1/4 cup Water
- to taste Salt
- 3 cloves Garlic
- Parsley
- to taste Lemon
- 3-4 cups Cornstarch
- The type of tahini used in the chef's instructions Thick tahini
Instructions
- In the marinating bowl, wash the fish and remove the scales if present.
- In the marinating bowl, combine the cumin, ground coriander, salt, sweet paprika, white pepper, garlic, and lemon juice.
- In the marinating bowl, make shallow slashes in the fish if it is large, so the marinade can penetrate.
- In the marinating bowl, coat the fish with the marinade and leave for 2 hours, or 5 to 6 hours at most according to the chef's instructions, noting that the lemon may make the fish mushy if left too long.
- In a food processor, blend the tahini with the water, salt, garlic, and lemon juice to make the tahini sauce.
- In the sauce bowl, add the parsley to the tahini sauce and stir, then refrigerate the sauce.
- In the water bowl, mix the water with the egg, vinegar, salt, and white pepper until a light foam forms.
- In the flour bowl, mix the all-purpose flour with the ground coriander, cumin, salt, white pepper, and breadcrumbs.
- In the flour bowl, add 4 to 5 spoonfuls of the egg water to the flour mixture to create clumps and a rough texture.
- In the frying pan, heat the frying oil until suitable; if a piece of flour dropped into the oil begins to rise slowly and then quickly, the oil is ready.
- In the flour bowl, coat a piece of fish with flour.
- In the water bowl, dip the piece of fish in the water for a few seconds.
- In the flour bowl, coat the piece of fish with flour again, pressing it several times until it is well covered on all sides.
- In the frying pan, turn the piece of fish over and shake it slightly to remove excess flour.
- In the frying pan, place the piece of fish in the hot oil and do not add anything else with it so that the oil does not cool.
- In the frying pan, fry the fish until the bubbles stop and the fish rises to the surface of the oil on its own.
- In the frying pan, remove the fried fish and serve it hot with tahini sauce.
