
Homemade Professional Burger
A homemade burger made with original-style burger buns.
Like a restaurant-style burger you assemble at home.
Focus on shaping the burger well and using soft buns.
Ingredients
- 320 g all-purpose flour
- 120 ml milk
- 1/2 tsp salt
- 1/2 tbsp sugar
- 1/2 tbsp instant yeast
- one egg
- 1 tbsp unsalted butter
- 5 tbsp milk
- 2 tbsp water
- 2 tbsp flour
- 4 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp vinegar or pickle brine
- 500 g veal with 20% fat, or lamb fat, or fat from the meat itself
- salt
- pepper
- 50 g boiled potato
- for greasing vegetable oil
- sesame seeds
- a small amount water
- one egg
- one slice Cheddar
- one slice Kashkaval cheese
- rings onion
- lettuce
- 3 slices tomato
- liquid hot sauce
- a little water water spray or steam
Instructions
- In a bowl, mix the warm milk with the sugar and instant yeast, and leave the mixture until it activates.
- In a small saucepan or small frying pan over low heat, cook the milk with the water and flour until it has a starch-like consistency, then add it to the dough.
- In the mixing bowl, add the flour and salt, then add the milk-and-yeast mixture. Add the egg afterward and knead until the dough comes together.
- On the work surface, add the butter and knead the dough until it is smooth and non-sticky.
- Place the dough in a bowl greased with butter or vegetable oil, then cover the bowl tightly and leave it in a warm place until the dough doubles in size.
- On a butter-greased work surface, shape the dough into a long form, then divide it into pieces weighing approximately 100 g each.
- Shape each piece into a round while keeping as much air inside as possible, then place the pieces on a baking tray lined with parchment paper.
- In a small bowl, mix the milk with the egg and brush the surface of the dough pieces with this mixture.
- If desired, sprinkle sesame seeds over the brushed dough.
- Bake the burger buns in an oven preheated to 190 degrees with top and bottom heat for 10 to 15 minutes, placing the tray below the middle rack, until browned and puffed.
- After removing the burger buns from the oven, brush their tops with butter or vegetable oil, then leave them to cool slightly.
- In a small bowl, mix the mayonnaise with the ketchup and vinegar or pickle brine until the sauce becomes orange in color.
- Shape the meat into thick patties suitable for the size of the burger buns, avoiding overworking the meat.
- Heat the frying pan well, then cook the meat patties on the first side before flipping them to the second side.
- Add salt and pepper to the meat while it cooks in the frying pan.
- Place the cheese on the meat patty in the frying pan, then add a little water to the pan and cover it until the cheese melts.
- Open the burger buns and spread the sauce inside.
- Place the lettuce and tomato over the bun, then add the meat patty with cheese, followed by the onion if used.
- Close the burger with the top bun and serve hot.
