
Ramadan Pillow Pastries
A sweet Ramadan dessert or pastry known as Ramadan Pillow Pastries.

Ingredients
- 2 cups (320 g) flour
- half a cup (100 ml) warm water
- 1 egg yolk
- half tsp vinegar
- 5 g vanilla
- 1 tbsp sugar
- 1 tbsp yeast
- a pinch salt
- 1 tbsp melted ghee
- date molasses
- to taste tahini
- a pinch sesame seeds
- a pinch cornstarch
Instructions
- In a bowl, mix the warm water with the sugar and yeast until the ingredients dissolve completely.
- In a large bowl, place the flour, add the melted ghee, and rub it into the flour.
- Add the egg yolk, vanilla, vinegar, and a pinch of salt to the bowl of flour.
- Knead in the bowl or on a work surface until the dough comes together and becomes soft, smooth, and non-sticky.
- Place the dough in a bag or bowl and let it rest for half an hour.
- After resting, sprinkle the work surface with cornstarch.
- Roll out the dough on the work surface with a rolling pin until it is very thin.
- Cut the dough into rectangular shapes or any desired shape.
- Heat the oil in a frying pan over low heat, keeping it hot.
- Fry the pieces in the pan, turning them, until they puff up and turn golden.
- Remove the pieces from the pan and place them on a serving plate.
- Add date molasses over the hot pieces.
- Add tahini over the date molasses, to taste.
- Sprinkle sesame seeds over the top, then serve hot.
