
Ramadan Qatayef
A popular Ramadan dessert made from stuffed qatayef batter.
A popular stuffed Ramadan pancake or dumpling dessert.
Like a small filled pancake pocket.
Ingredients
- 3 cups Sugar
- 1 1/2 cups Water
- 1 Slice of lemon
- 5 drops Orange blossom water
- 6 cups Warm water
- 2 tablespoons Sugar
- 1 teaspoon Yeast
- 3 1/2 cups All-purpose flour
- 1/2 cup Fine semolina
- 1/2 cup Cornstarch
- 1 teaspoon Salt
- 1/4 teaspoon Baking soda (carbonate)
- according to the filling Ashta
- a little Aleppo pistachios
- according to the filling Cheese
- a little Walnuts
- a little Cinnamon
- a little Coconut
Instructions
- Place the sugar, water, slice of lemon, and 5 drops of orange blossom water in a pot to prepare the syrup.
- Mix 6 cups of warm water with 2 tablespoons of sugar and 1 teaspoon of yeast in the mixing bowl.
- Add the all-purpose flour, fine semolina, cornstarch, salt, and baking soda (carbonate) to the mixing bowl to prepare the qatayef batter.
- Whisk the qatayef batter in the mixing bowl until smooth.
- Leave the qatayef batter in the mixing bowl for 30 minutes.
- Stir the qatayef batter frequently in the mixing bowl before use.
- Fill the qatayef with cheese, a little walnut, a little cinnamon, and a little coconut to prepare the qatayef filling.
- Fill the qatayef with ashta and a little Aleppo pistachio to prepare the asafiri filling.
- Seal the qatayef by hand after placing the filling inside.
- Store the qatayef in the refrigerator after preparation.
