Sahlab Powder

A homemade powdered mix for making sahlab, a thick hot milk drink.

A homemade powdered mix for making sahlab, a warm milk drink or pudding.

Like a hot creamy winter drink mix.

Stir the powder into milk over low heat to avoid lumps.

Ingredients

  • finely ground rice
  • powdered sugar
  • powdered whipped topping mix
  • powdered milk
  • cornstarch
  • mastic
  • vanilla
  • milk
  • cinnamon
  • pistachios

Instructions

  1. Grind the required amount of finely ground rice in a bowl or blender until it becomes a fine powder.
  2. Grind the mastic with a little sugar in a bowl or mortar until it is finer.
  3. Sift all the listed dry ingredients into a bowl: ground finely milled rice, powdered sugar, powdered whipped topping mix, powdered milk, cornstarch, ground mastic, and vanilla.
  4. Mix the dry ingredients well in a bowl until completely combined.
  5. Place a clean, dry pot on the stove, then add 1 liter of milk to the pot.
  6. Add 7 tablespoons of sahlab powder to the pot with the milk before turning on the heat.
  7. Stir the mixture well in the pot while cold until the powder is mixed into the milk.
  8. Turn the heat to medium under the pot, stirring continuously until the mixture thickens.
  9. Pour the hot sahlab into a bowl or finjan, as desired.
  10. If the mixture is not sweet enough, add sugar to the pot.
  11. If desired, add cinnamon to the pot with the sahlab while it cooks.
  12. Add a pinch of Aleppo pistachios over the sahlab when serving.
