Semolina Maamoul

This is a luxurious Syrian semolina maamoul recipe. The dough is made with farakha flour, flour, ghee, yeast, baking soda, sugar, and water, then left in the refrigerator for 1 hour. Three fillings are then prepared: date paste with ghee and cardamom, walnuts with ghee, sugar syrup, and orange blossom water, and pistachios with ghee, sugar syrup, and rose water. The pieces are shaped in maamoul molds and baked at the oven’s highest temperature for a short time, until the tops turn blond with a reddish tint.

A semolina-based maamoul, a filled cookie or pastry often served for celebrations.

Shape the dough gently so it stays tender and does not crack too much.

Ingredients

  • 1 kilo farakha flour Farakha flour
  • 1 cup Flour
  • ½ kilo Ghee
  • 1 teaspoon Instant yeast
  • ¼ teaspoon Baking soda
  • 200 grams Sugar
  • 1½ cups Water
  • ground date paste Ground date paste
  • 1 teaspoon Ground cardamom
  • crushed walnuts Crushed walnuts
  • ½ cup Sugar syrup
  • 7 drops Orange blossom water
  • crushed Aleppo pistachios Crushed Aleppo pistachios
  • 7 drops Orange blossom water
  • 1 slice Lemon

Instructions

  1. In a bowl, combine 1 kilo of farakha flour, 1 cup of flour, ½ kilo of ghee, 1 teaspoon of yeast, ¼ teaspoon of baking soda, and 200 grams of sugar for the maamoul dough.
  2. Gradually add 1½ cups of water to the bowl until the dough comes together.
  3. Knead the dough well in the bowl until it absorbs the ghee and reaches the proper consistency.
  4. Cover the dough and place it in the refrigerator for 1 hour to rest.
  5. Prepare the date-paste filling in a bowl by mixing the ground date paste with 1 tablespoon of ghee and 1 teaspoon of ground cardamom.
  6. Prepare the walnut filling in a bowl by mixing the crushed walnuts with 1 tablespoon of ghee, ½ cup of sugar syrup, and 7 drops of orange blossom water.
  7. Prepare the pistachio filling in a bowl by mixing the crushed Aleppo pistachios with 1 tablespoon of ghee, ½ cup of sugar syrup, and 7 drops of rose water.
  8. After resting, divide the dough and fill it according to the desired type.
  9. Shape the maamoul pieces in special maamoul molds.
  10. Arrange the maamoul pieces on an oven tray.
  11. Bake the tray of maamoul in an oven at the highest temperature for 6 to 10 minutes, depending on the oven.
  12. Remove the tray of maamoul from the oven when the tops take on a blond color with a reddish tint.
