
Syrian Falafel with Secret Hot Sauce

- 1 Large sweet red pepper
- 10 peppers Small hot red peppers
- 1 tbsp Pomegranate molasses
- 1 tbsp White vinegar
- Olive oil

Instructions
- Soak the dried chickpeas in a bowl the day before, or soak them for 12 hours.
- Place the soaked chickpeas with half a small onion, 2 garlic cloves, parsley, cilantro, and mint leaves in a food processor or kibbeh grinder, then grind until the mixture holds together.
- Add the salt, white pepper, cumin, coriander seeds, and baking soda to the mixing bowl, then mix the mixture well.
- Add a little water to the falafel mixture if it needs moisture, then mix until the dough has the right consistency.
- Prepare the tahini sauce in a bowl by mixing half a cup of tahini with a quarter cup of yogurt, the juice of half a lemon, half a teaspoon of salt, and half a cup of water, then mix until it reaches the right consistency.
- Prepare the hot sauce in a blender by grinding 1 large sweet red pepper with 10 small hot red peppers, then add the pomegranate molasses, white vinegar, salt, and olive oil.
- Shape the falafel using a mold or by hand, then press one side into sesame seeds before frying.
- Fry the falafel in a pan in oil at an unspecified temperature until puffed and cooked through inside.
- Prepare a falafel sandwich in saj bread or any bread you prefer, then add the falafel, tahini sauce, hot sauce, and sesame seeds.
