
Tamriya with Nuts and Sesame
A sweet dessert made with nuts and sesame.
Like a sesame and nut sweet or confection.
Shape carefully and let the sweet set before serving.
Ingredients
- 1 and a half kilos ground dates
- as desired nuts
- 1 tablespoon ground cardamom
- 1 teaspoon ground cinnamon
- as desired finely ground Aleppo pistachios
- 1 cup toasted sesame seeds
- 1 cup (225 g) ghee
- 1 and a half cups thick sugar syrup
- 2 packages (as desired) plain biscuits
- quarter of a spoon citric acid
- a glass water
- 3 glasses sugar
Instructions
- Prepare the dates in the mixing bowl, pitted, ground, and ready to use. Regular dates may also be used; pit and grind them in a machine with a little ghee until they become paste-like and easy to work with.
- Place the ghee in a pot or pan over medium heat on the stove.
- Add the dates to the pot or pan with the ghee on the stove.
- Lower the heat under the pot or pan and gently stir the dates with the ghee so they do not stick.
- Add the ground cardamom and ground cinnamon to the dates in the pot or pan on the stove.
- Stir the dates in the pot or pan over low heat until combined with the ghee, cardamom, and cinnamon.
- Add the plain biscuits to the dates in the pot or pan on the stove.
- Stir the date and biscuit mixture in the pot or pan on the stove until the biscuits absorb the ghee and the mixture is fully combined.
- Turn off the heat under the pot or pan once the date mixture is ready.
- Set the date mixture aside in a bowl or in the pot until it cools and is suitable for spreading by hand.
- Lightly toast the nuts in a pan on the stove over low heat or in the oven, stirring frequently, until they dry out and become fragrant.
- Remove the nuts from the pan or oven once they are lightly toasted.
- Add the thick sugar syrup to the hot nuts in the bowl while the syrup is cold, monitoring the amount until they hold together.
- Leave the nuts with the sugar syrup in the mixing bowl until cooled and combined.
- Sprinkle finely ground Aleppo pistachios in the tray in a light layer to give an attractive appearance and help prevent sticking.
- Spread the date mixture evenly in the tray by hand.
- Distribute the nuts evenly over the date layer in the tray.
- Press the nut layer over the dates in the tray until level and even.
- Leave the tray outdoors or in the refrigerator for about two or three hours until cool and set.
- For the sesame version, place a piece of the date mixture on nylon plastic over the work surface.
- Shape the date mixture on the nylon plastic into a roll of the desired size.
- Coat the date roll with sesame seeds on all sides so that no part remains exposed.
- Place the sesame-coated date roll in a tray and leave it in a cool place until set.
- Cut the nut-filled tamriya in the serving tray into pieces of the desired size after it has cooled.
- Cut the sesame-coated tamriya rolls on a cutting board or in the serving tray into pieces of the desired size after they have set.
- Serve the pieces on a serving plate or in guest-serving papers.
