Armenian Sausage with Ayran

This recipe is sausage made with finely ground meat seasoned with garlic, pepper paste, 7-spice blend, cumin, dried coriander, black pepper, fenugreek, and cinnamon, then cooked in a skillet over low heat until done. The sausage is served with ayran made from yogurt, water, ice, and salt. It can also be served in samoon bread with pickled cucumbers or mozzarella cheese.

Ingredients

  • 1 kilogram finely ground meat
  • 2 tablespoons crushed garlic
  • 1 tablespoon pepper paste
  • 1 tablespoon 7-spice blend
  • 1 teaspoon cumin
  • 1 teaspoon dried coriander
  • 1 teaspoon black pepper
  • 1/2 teaspoon fenugreek
  • 1 tablespoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup vegetable oil
  • 1/2 cup water
  • as mentioned ice
  • approximately 1 kilogram yogurt
  • light a pinch of salt
  • as mentioned samoon bread
  • a little pickled cucumbers
  • a little mozzarella cheese
  • substitute when pepper paste is unavailable paprika or dried pepper

Instructions

  1. Put 1/2 cup vegetable oil in a skillet over medium heat or slightly below medium.
  2. Add the crushed garlic to the skillet and stir it in the oil until it softens slightly.
  3. Sprinkle the salt over the garlic in the skillet, keeping in mind that the pepper paste contains salt.
  4. Add the finely ground meat to the skillet over the garlic and begin breaking up the meat with a spoon.
  5. Add the dried coriander, cumin, black pepper, 7-spice blend, fenugreek, and ground cinnamon to the skillet.
  6. Stir the meat mixture in the skillet over medium heat until the spices are combined with the meat.
  7. Add the pepper paste to the skillet at the final stage of seasoning.
  8. Continue stirring the sausage mixture in the skillet over low heat for 20 to 22 minutes, until cooked through.
  9. Remove the sausage from the skillet, place it in a bowl, and let it rest and cool slightly.
  10. To prepare the ayran, put 1/2 cup water, ice, approximately 1 kilogram yogurt, and a light pinch of salt in a blender.
  11. Run the blender until the ayran is smooth, then place the ayran in the refrigerator.
  12. Put an amount of sausage inside a samoon roll, then close the bread.
  13. Put the sausage sandwich in the sandwich toaster and leave it until browned.
  14. Add the pickled cucumbers to the sandwich after toasting, not before.
  15. For another version, put a little mozzarella cheese over the sausage inside the bread, then close the bread and put it in the sandwich toaster until the cheese melts.
