Slice the meat thinly after cooking for the classic döner texture.

Ingredients

  • 800 g finely ground lamb
  • 200 g fat
  • 2 tbsp yogurt
  • juice of 2 onions onion juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp sweet smoked paprika
  • 700 g flour
  • 2 tsp sugar
  • 400 ml water
  • 1 packet yeast, 11 g yeast
  • 2 tbsp oil for softening
  • 1 tbsp butter
  • 1 tbsp tomato paste
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1 kg peeled chopped tomatoes
  • 300 ml water
  • 1/2 tsp sugar
  • 250 g butter for finishing
  • a pinch white pepper
  • a pinch nigella seeds
  • egg yolk egg
  • milk
  • breadcrumbs

Instructions

  1. In a bowl, combine 800 g finely ground lamb with 200 g fat, 2 tbsp yogurt, the juice of 2 onions, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp sweet smoked paprika.
  2. In a bowl, knead the meat ingredients until cohesive.
  3. In the meat bowl, let the mixture rest for 30 minutes.
  4. In a bowl, combine 700 g flour with 1 tsp salt, 2 tsp sugar, 400 ml water, 1 packet yeast (11 g), and 2 tbsp oil for softening.
  5. In the dough bowl, knead the ingredients for 10 minutes.
  6. In the dough bowl, let the dough rise for 30 minutes.
  7. In a pot or frying pan, melt 1 tbsp butter with 1 tbsp tomato paste.
  8. In the pot or frying pan, add 1/4 tsp salt, 1/4 tsp black pepper, 1/2 tsp paprika, and 1/2 tsp oregano.
  9. In the pot or frying pan, add 1 kg peeled chopped tomatoes, 300 ml water, and 1/2 tsp sugar, then let the sauce simmer over low heat.
  10. In the oven, bake the rolled-out dough until cooked through.
  11. In the oven, bake the meat portions shaped in parchment paper until cooked through and browned.
  12. In the oven, heat 250 g butter for finishing until it boils.
  13. To serve, layer the bread with the red sauce and meat, then pour the hot butter over it.
  14. Serve the dish hot.
