- 3 pieces large eggplants

- mixed-color bell peppers

Instructions
- Wash the eggplants in the kitchen and clean them well.
- Peel the eggplants in striped fashion, or leave the peel on as desired.
- Cut the eggplants into thick cubes on a cutting board.
- Transfer the eggplant cubes to a bowl and sprinkle them with salt.
- Leave the eggplant in the bowl for about a quarter of an hour, until it releases its water.
- Drain the eggplant in a colander to discard the liquid it has released.
- Transfer the eggplant to paper towels and dry it well so that no water remains.
- Place the eggplant in a bowl and sprinkle it with flour.
- Toss the eggplant with the flour in the bowl until the flour is distributed over it.
- Fry the eggplant in a frying pan until golden and crisp.
- Transfer the fried eggplant to paper towels to remove the excess oil.
- Heat a little olive oil in the frying pan over the heat.
- Add the chopped garlic to the frying pan.
- Add the mixed-color bell peppers to the frying pan with the garlic.
