Bulgur Mujaddara

This simple Syrian bulgur mujaddara is made with lentils and coarse bulgur, topped with crispy fried onions in olive oil. Flour and cornstarch are used to coat the onions before frying. The lentils are boiled, then combined with bulgur, lentil cooking water, and salt. The mujaddara is stirred with the onion-frying oil, garnished with fried onions, and served hot.

A hearty lentil and bulgur dish commonly served as a simple meal.

Cook the lentils and bulgur until tender and well combined.

Ingredients

  • as desired Onion, cut into slices
  • optional Small whole onions

Instructions

  1. Combine the onions in a bowl with the flour and cornstarch until well coated.
  2. Heat the olive oil in a frying pan, then fry the onions in batches until golden and crisp, then drain.
  3. Wash the lentils in a pot, then boil them in an amount of water until cooked but not overly softened.
  4. Take some of the lentil cooking water into the cooking pot, then add the washed bulgur, boiled lentils, and salt. Cook until the bulgur is done.
  5. Add the optional small onion pieces to the cooking pot before serving.
  6. Add the olive oil used for frying the onions to the cooking pot, then stir the mujaddara well.
  7. Garnish the mujaddara with the fried onions and serve hot.
