Cheese Maamoul

This is a Syrian-style cheese maamoul recipe. The dry ingredients are mixed with melted ghee and left to rest, then the cheese is prepared with starch and frozen. The discs are then shaped with the cheese filling and frozen again before baking in a preheated oven until the tops are browned and the cheese melts inside.

A filled pastry or cookie made with cheese filling, often served as a sweet treat.

Like a soft filled cookie or pastry turnover.

Seal the edges well so the cheese filling does not leak.

Ingredients

  • fine semolina
  • all-purpose flour
  • Arabic ghee
  • powdered sugar
  • orange blossom water
  • rose water
  • baking powder
  • cheese
  • ashta
  • butter
  • powdered milk
  • quarter teaspoon starch
  • half teaspoon vanilla
  • powdered sugar for decoration
  • a pinch Damask rose petals for decoration

Instructions

  1. Mix the semolina, flour, vanilla, powdered milk, and orange blossom water in a bowl.
  2. Add the melted ghee to the bowl over the dry ingredients and stir well until they absorb the ghee.
  3. Leave the mixture in the bowl for at least 1 hour to rest.
  4. Crumble the cheese in another bowl.
  5. Add a quarter teaspoon of starch to the bowl of cheese.
  6. Shape the cheese into small discs or balls on a tray.
  7. Place the tray of cheese in the freezer until frozen.
  8. Shape the prepared dough into discs, placing a piece of frozen cheese in each disc.
  9. Seal the discs and shape the maamoul as desired.
  10. Place the maamoul discs in the freezer again until firm.
  11. Preheat the oven using both top and bottom heat.
  12. Bake the maamoul in the oven until it develops a beautiful color and the cheese melts inside.
  13. Remove the maamoul from the oven and serve; it can be decorated with powdered sugar and a pinch of Damask rose petals.
