Chicken Kabsa

A rice dish with chicken and spices, cooked as a complete meal.

A spiced rice and chicken dish cooked together as a full meal.

Like a seasoned chicken and rice platter.

The rice usually absorbs the chicken seasoning, so use enough broth or cooking liquid.

Ingredients

  • as desired chicken
  • 1 kg or 5 cups long-grain rice [basmati]
  • 1 cup or 2 tomatoes, diced
  • 1/2 cup white raisins
  • 3/4 cup corn oil
  • 1 cup or 2 green bell peppers, diced
  • 2 grated carrots
  • 6 pieces loomi (dried limes)
  • 1 1/2 tablespoons tomato paste
  • 1/2 teaspoon ginger
  • 4 bay leaves
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 3 pieces cloves
  • 7 pieces cardamom
  • 1 teaspoon mixed spices or seven-spice blend
  • 1/2 teaspoon curry powder
  • 1 tablespoon Maggi seasoning
  • 2 medium onions, diced onions
  • 7 cloves, sliced garlic
  • 5 tablespoons lemon juice
  • 1/4 cup water
  • 1/4 cup Mazola oil
  • 1 hot green chili pepper
  • 1 teaspoon mixed spices
  • 1 tablespoon tomato paste
  • 1 tablespoon pepper paste
  • 1/2 cup corn oil
  • 2 tablespoons parsley
  • 1 sweet green bell pepper
  • 5 cloves garlic
  • 1 small tomato
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • as desired pine nuts
  • as desired almonds
  • as desired cashews

Instructions

  1. In a pot, wash the basmati rice and set it aside until it is time to add it.
  2. In a pot, heat the corn oil, then add the diced onions and sliced garlic and stir until softened.
  3. In a pot, add chicken as desired and stir it with the onions and garlic.
  4. In a pot, add the diced tomatoes, grated carrots, diced green bell peppers, and white raisins.
  5. In a pot, add the loomi, bay leaves, ginger, turmeric, black pepper, cloves, cardamom, mixed spices or seven-spice blend, curry powder, Maggi seasoning, and tomato paste, then mix the ingredients.
  6. In a pot, add the basmati rice, then add the amount of water needed for cooking.
  7. In a pot, leave the kabsa until the rice and chicken are cooked together.
  8. In a frying pan, prepare the sauce with lemon juice, water, Mazola oil, hot green chili pepper, mixed spices, tomato paste, pepper paste, corn oil, parsley, sweet green bell pepper, garlic, small tomato, salt, and ground coriander.
  9. On a serving platter, serve the kabsa hot and garnish with pine nuts, almonds, or cashews as desired.
