Clay-Pot Shish

A shish-style meat dish cooked in a clay pot.

Like kebab meat braised or baked in a clay dish.

Ingredients

  • 1.5 kilos and a half Chicken slices, cut into large pieces
  • 3 pieces Mixed-color bell peppers
  • half a cup Olive oil
  • 2 pieces Medium tomatoes
  • 2 pieces Medium onions
  • 200 g Fresh mushrooms
  • 5 tablespoons Vinegar
  • 1.5 tablespoons Pepper paste
  • 1.5 tablespoons Tomato paste
  • 1 teaspoon Oregano
  • 1 teaspoon White pepper
  • 1 teaspoon Curry
  • 1 teaspoon Ginger
  • half a teaspoon Cardamom
  • 1.5 tablespoons Maggi seasoning or salt
  • 6 cloves Fresh garlic
  • half-hour soak Water
  • for soaking Salt
  • for soaking White vinegar
  • 5 tablespoons White vinegar
  • 1.5 tablespoons Maggi seasoning
  • as a substitute for Maggi seasoning if unavailable Salt
  • 2 Maggi stock cubes
  • for optional covering Dough
  • a spritz Water
  • for sprinkling Nigella seeds
  • for sprinkling Sesame seeds

Instructions

  1. Soak the chicken in a bowl with water, salt, and vinegar for half an hour to remove any raw odor.
  2. After cleaning away the veins, cut the chicken into large pieces in the cutting bowl.
  3. On a cutting board, cut the bell peppers, tomatoes, onions, and mushrooms into large pieces, and slice the garlic into thin slices.
  4. Place the olive oil in a mixing bowl.
  5. Add the Maggi seasoning, vinegar, pepper paste, and tomato paste to the mixing bowl.
  6. Place the chicken pieces in the mixing bowl and mix with the marinade.
  7. Add the chopped vegetables to the mixing bowl and mix with the chicken until the marinade is distributed over all the ingredients.
  8. Transfer the mixture to a clay pot, a Pyrex dish, or an ovenproof tray.
  9. Divide the quantity between two clay pots if the clay pot is small.
  10. Add a quarter cup of water to each clay pot, or to each portion of the mixture in the suitable dish.
  11. Cover the clay pot or tray with parchment paper and plastic wrap if a clay pot is not available.
  12. Place the dish in the oven at 220°C for about 1 hour; it may need longer.
  13. After cooking, add the dough over the dish if you would like to serve it restaurant-style.
  14. Spritz the dough with water, then sprinkle with nigella seeds and sesame seeds; place it in the oven until the bread is cooked on top.
