Chicken Mexicano

This Mexican chicken recipe features chicken pieces seasoned with a blend of chicken seasoning, curry, paprika, garlic powder, onion powder, white pepper, and salt, then lightly fried. In another pan, onion is sautéed with garlic and ginger, followed by mushrooms and mixed-color bell peppers, then sweet sauce or sweet chili sauce or ketchup with pepper molasses. The mixture is spread in a baking tray, topped with the chicken, and baked at 200 degrees for about half an hour, then browned lightly on top. The recipe is spicy and smoky with a Mexican-style character and is served hot.

  • 1 tablespoon Pepper molasses
  • Garlic
  • 1.5 tablespoons Chicken seasoning
  • 1 teaspoon Curry
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon White pepper
  • 1 tablespoon Salt
  • Olive oil
  • Sweet chili sauce
  • Sweet-and-spicy sauce
  • Mazola oil
  • Corn oil
  • Butter
  • Maggi seasoning

Instructions

  1. In a bowl, combine the chicken seasoning, curry, paprika, garlic powder, onion powder, white pepper, and salt.
  2. In a bowl, season the chicken with the mixed spices.
  3. In a frying pan, heat the oil, then fry the chicken until it is about three-quarters cooked and lightly colored.
  4. In another frying pan, heat the olive oil, then add the onion, garlic, ginger, and mixed spices, stirring until softened.
  5. Add the mushrooms to the pan and stir them with the onion, then add the mixed-color bell peppers and stir until the vegetables soften.
  6. Add sweet chili sauce or ketchup to the pan and mix the ingredients well.
  7. In a baking tray, spread out the vegetable and sauce mixture, then arrange the fried chicken on top.
  8. Bake the tray in the oven for half an hour at 200 degrees.
  9. Briefly brown the top in the oven until it takes on color.
