
Crispy and Broasted Chicken
This recipe explains how to make crispy chicken and broasted chicken at home, using a method that first boils the chicken until half-cooked with spices and onion to remove any raw odor and ensure it cooks through. A seasoned flour mixture and an egg-and-milk mixture are then prepared. Crispy chicken fillets are coated in flour, then egg and milk, then flour again, and the layers may be repeated. Broasted chicken pieces are first coated in flour and chilled in the freezer, then dipped in the egg-and-milk mixture, coated in flour once, and fried immediately. Fry in plenty of hot oil, lowering the heat after the pieces are added to the oil.

Ingredients
- As needed, ensuring that a whole chicken does not exceed 1200 g in weight Chicken or chicken pieces
- As needed Chicken thighs
- 3 wings Chicken wings
- As needed Chicken fillet slices
- 1.5 cups White flour
- 0.5 cup Farikha flour or very fine semolina, similar to flour
- 0.5 cup Cornstarch
- 1 cup Milk
- 2 Eggs
- 2 teaspoons for the flour + 0.5 teaspoon for the egg-and-milk mixture Dried garlic
- 1 teaspoon for the flour + 1 tablespoon for boiling Curry
- 1 teaspoon for the flour + 0.5 teaspoon for the egg-and-milk mixture + 1 tablespoon for boiling Black pepper
- 1 teaspoon Dried coriander
- 1 teaspoon Hot pepper
- 1 teaspoon Oregano
- 1 teaspoon Dried onion
- 1 teaspoon Baking powder
- 2 teaspoons for the flour + 1 tablespoon for boiling Maggi seasoning
- 1 tablespoon Ginger
- 2 to 3 sticks Cinnamon sticks
- 1, cut into 4 pieces Onion
- As needed for boiling Water
- A generous amount for frying Oil
Instructions
- Warm the water slightly in a pot over the heat, then add the ginger, curry, black pepper, cinnamon sticks, and Maggi seasoning, and stir the ingredients in the pot.
- Cut the onion into four pieces, then add it to the pot over the heat.
- Rinse the chicken pieces with water before putting them in the pot so the blood drains out.
- Cut off the tip of each wing at the joint to prepare the wings before boiling.
- Put the chicken pieces into the pot once the water has boiled, and leave them until they are approximately half-cooked.
- Remove the foam that rises to the surface of the boiling water during cooking.
- Cover the pot over the heat after about 5 minutes of boiling, and leave the chicken for another 5 to 7 minutes, for a total boiling time of about 12 minutes.
- Drain the chicken pieces from the pot after boiling and allow them to cool slightly outside the pot.
- Clean the chicken breasts of veins and fat, then cut them on a diagonal into long, neat crispy chicken fillets.
- Place the white flour, farikha flour or very fine semolina, and cornstarch in a large mixing bowl.
- Add the dried garlic, Maggi seasoning, and the remaining listed spices to the bowl of flour, then mix the dry seasoning well in the bowl.
- Place the eggs, milk, 0.5 teaspoon dried garlic, and 0.5 teaspoon black pepper in another bowl, then whisk the mixture well.
- Lightly dip the boiled chicken pieces in the seasoned flour mixture in the bowl, then arrange them on a tray.
- Put the tray of flour-coated chicken pieces in the freezer for about half an hour.
- Dip the crispy chicken fillets first in the flour mixture in the bowl.
- Transfer the crispy chicken fillets from the flour bowl to the egg-and-milk bowl.
- Return the crispy chicken fillets to the flour bowl a second time for coating.
- For those who like a thick coating, the crispy chicken fillets may be coated again in the egg-and-milk bowl and then in the flour bowl a third or fourth time.
- Immediately before frying the crispy chicken fillets, coat them again with a light layer of flour in the flour bowl.
- Heat a generous amount of oil in a frying pan or deep fryer until it reaches 180°C.
- Place the crispy chicken fillets in the frying pan or deep fryer immediately after coating them in flour, then lower the heat to about medium so the oil does not cool down and the fillets cook through on the inside.
- Leave the crispy chicken fillets in the frying pan or deep fryer for about 5 minutes at first, until they begin to turn golden.
- Turn the crispy chicken fillets in the frying pan or deep fryer once the outer coating has set, then continue frying until they reach the desired golden color.
- Remove the crispy chicken fillets from the frying pan or deep fryer after about 12 minutes in total, lowering the temperature from 180°C to 160°C after they are added to the oil.
- Place the fried crispy chicken fillets on a plate lined with paper towels to drain excess oil.
- Remove the broasted chicken pieces from the freezer after about half an hour.
- Dip the broasted chicken pieces from the freezer into the bowl of egg-and-milk mixture, then return them to the flour bowl once only.
- Transfer the broasted chicken pieces directly from the flour bowl to the frying pan or deep fryer containing plenty of hot oil.
- Lower the heat in the frying pan or deep fryer to about 150°C after the broasted chicken pieces are added to the oil.
- Leave the broasted chicken pieces in the frying pan or deep fryer for 10 to 12 minutes, or approximately 13 minutes, until properly cooked, noting that they have been pre-boiled.
- Remove the broasted chicken pieces from the frying pan or deep fryer once golden, then place them on paper towels to drain the oil.
