Emirati Luqaimat

Fry in batches so the dough balls cook evenly.

Ingredients

  • 2 cups (500 g) all-purpose flour
  • 2 tablespoons cornstarch
  • 2 tablespoons sugar
  • 1 packet (10 g) dry yeast
  • 1 packet (10 g) baking powder
  • a pinch salt
  • a pinch (¼ tablespoon) cardamom
  • a pinch saffron
  • 3/4 cup water
  • 3/4 cup milk
  • 3 tablespoons vegetable oil
  • for garnish date molasses
  • for garnish Aleppo pistachios
  • 1½ cups water
  • 3 tablespoons powdered milk

Instructions

  1. In a mixing bowl, combine the all-purpose flour with the cornstarch, sugar, dry yeast, baking powder, salt, cardamom, and saffron.
  2. In the same mixing bowl, add the water, milk, and vegetable oil to the dry ingredients.
  3. Using a stand mixer or by hand in the mixing bowl, knead the mixture until a smooth, uniform dough forms.
  4. Cover the mixing bowl and leave the dough to rise for one full hour in a warm, dark place.
  5. After rising, shape the dough into small luqaimat dough balls.
  6. In a frying pan over the heat, fry the luqaimat balls until golden.
  7. Serve the luqaimat hot on a serving plate, then garnish with date molasses and Aleppo pistachios.
