This is an enriched dough, so the bread should come out soft and rich. The coffee topping gives it a crisp, sweet finish.
Ingredients
- 540 g or 4 cups for the dough, and 170 g or 1½ cups for the cream flour
- 80 g or 4 tablespoons sugar
- 180 ml water
- 1 teaspoon salt
- 2 tablespoons yeast
- 2 eggs for the dough and 2 eggs for the cream eggs
- 40 g unsalted butter
- 70 g or 5 tablespoons powdered milk
- 10 g cubes for each piece salted butter
- 160 g or 2 cups powdered sugar
- 130 g butter
- 2 tablespoons hot water
- 2 tablespoons Nescafé instant coffee
Instructions
- In a mixing bowl, combine the water with the yeast and sugar.
- In a mixing bowl, add the flour to the dough mixture.
- In a mixing bowl, add the salt to the dough mixture.
- In a mixing bowl, add the butter to the dough mixture.
- In a mixing bowl, mix the dough ingredients until the dough is ready.
- In a mixing bowl, beat the butter with the powdered sugar to prepare the cream.
- In a mixing bowl, add the eggs to the cream mixture.
- In a mixing bowl, add the coffee to the cream mixture.
- In a mixing bowl, add the flour to the cream mixture in batches.
- In a bowl, brush the dough with oil.
- On the work surface, cut the salted butter into cubes.
- On the work surface, flatten a piece of dough.
- On the piece of dough on the work surface, add a cube of butter.
- On the work surface, close the piece of dough over the butter.
