
Frozen Potatoes Baked in the Oven

Ingredients
- 2.5 kg potatoes
- 1.25 kg onions
- 2 tbsp Maggi seasoning
- 1.5 tsp ground coriander
- 1 tsp black pepper
- 1 tsp mixed spice
- 1 tsp curry powder
- 1 cup olive oil
- quantity as desired chicken
- bay leaves
- cinnamon
- cardamom
- quantity as desired fresh garlic
- 1 cup fresh lemon juice
- a pinch of salt salt
Instructions
- Slice the potatoes into medium-thick slices in a bowl—not too thick and not too thin.
- Slice the onions into strips in a bowl, not too thinly.
- Add the olive oil to the potatoes and onions in the bowl.
- Add the Maggi seasoning to the potatoes and onions in the bowl.
- Add the ground coriander, black pepper, mixed spice, and curry powder to the bowl.
- Toss the potatoes and onions with the spices in the bowl until the seasoning is evenly distributed.
- Place the seasoned potatoes in freezer-storage bags or airtight bags after removing the air from them.
- Spread the potatoes in a thin layer in the bags to make freezing easier in the freezer.
- Keep the bags in the freezer until the seasoned potatoes are frozen.
- Prepare the chicken in a pot on the stove and cover it with water.
- Add aromatic chicken spices and salt to the pot of chicken on the stove for five minutes to reduce any odor.
- Arrange the half-cooked chicken in an oven tray with the half-cooked potatoes.
- Bake the tray in the oven until the potatoes and chicken are fully cooked.
- Add the lemon juice and garlic at the end after removing the tray from the oven.
