
Homemade Sesame Tahini
This homemade sesame tahini uses only three ingredients: half a kilo of raw sesame seeds, two-thirds to three-quarters of a cup of sesame oil, and 1 teaspoon of salt. Warm the sesame seeds in a skillet over low heat, stirring constantly, then grind them in a food processor and gradually stream in the oil with the salt until smooth. The approximate recipe time is about half an hour, and the texture thickens after the tahini cools.

Blend until very smooth. If it feels too thick, a little more oil can help loosen it.

Instructions
- Heat the skillet over low heat.
- Place the raw sesame seeds in the skillet over low heat.
- Stir the sesame seeds in the skillet continuously until they are well warmed and can no longer be easily held in the hand.
- Transfer the hot sesame seeds to a food processor.
- Blend the sesame seeds in the food processor on low speed for five minutes.
- Stop the food processor and stir the mixture if necessary, then continue blending on low speed until it reaches a clumpy consistency.
- Gradually stream the sesame oil into the food processor while blending.
- Add the salt to the food processor while blending.
- Continue blending in the food processor until the texture is smooth and cohesive.
- Let the tahini cool after blending, as the texture thickens after cooling.
