Simit ring bread

Turkish simit consists of sesame-coated bread rings, made from a dough of flour, water, salt, sugar, vegetable oil, and yeast. The dough is shaped into rings, dipped in a mixture of date or grape molasses and water, coated with sesame seeds, then baked in a preheated 200°C oven until browned.

A Turkish sesame-coated bread ring, often eaten as a snack or breakfast bread.

Like a chewy sesame bagel or bread ring.

Ingredients

  • 500 g Flour
  • 300 ml Water
  • 1 tsp Salt
  • 2 tsp Sugar
  • 2 tsp Vegetable oil
  • 1 tsp (5 g) Yeast
  • 1 1/2 cups Water
  • 2 tbsp Date or grape molasses
  • 1/4 kilo Toasted sesame seeds
  • a drop / a spray Oil for greasing and shaping

Instructions

  1. In a mixing bowl, mix the flour well with the salt.
  2. In the same mixing bowl, add the sugar and yeast to the flour and stir the ingredients.
  3. In the same mixing bowl, add the water and vegetable oil, and knead the dough for five minutes.
  4. In the same mixing bowl, shape the dough into a ball, then divide it into approximately 7 equal pieces.
  5. On an oil-greased work surface, shape each piece into a ball without using flour on the surface.
  6. On a baking tray lined with parchment paper, leave the dough pieces covered for 15 minutes.
  7. In a separate bowl, prepare the molasses mixture with the water specified in the recipe.
  8. In a separate bowl, place the ready-to-use toasted sesame seeds.
  9. After resting, roll each ball out thin and long on the oil-greased work surface.
  10. On the same work surface, twist the dough into a spiral, pressing the layers so that they stick together.
  11. On the same work surface, fold the two ends of the twist together, shape it into a ring, and press the seam.
  12. Dip the ring in the molasses mixture, then coat it with sesame seeds.
  13. Place the coated rings on the parchment-lined baking tray.
  14. Cover the baking tray and leave the rings to rest for 15 minutes.
  15. Preheat the oven to 200°C, with heat from above and below.
  16. Place the baking tray in the oven on the middle rack.
  17. Bake the simit until golden; the chef noted that the time may be 20 minutes or may reach 50 minutes, depending on the oven.
