Nabulsiya Without Dough and Without Kunafa Cheese

A Nabulsiya-inspired dessert made without dough and without kunafa cheese.

Ingredients

  • 3½ cups flour
  • ½ cup fine or medium semolina
  • ½ cup cornstarch
  • 1 tsp baking powder
  • 2 tbsp ghee
  • 1½ cups milk
  • ¾ cup water
  • 1½ tbsp fine semolina
  • 250 g or according to the size of the baking tray cheese
  • 1 slice lemon
  • There is mention of possibly using water instead of milk water
  • A mentioned alternative to the cheese mozzarella
  • Mentioned as resembling the original kunafa cheese halloumi cheese

Instructions

  1. Mix all the dry ingredients in a bowl: 3½ cups flour, ½ cup fine or medium semolina, ½ cup cornstarch, and 1 tsp baking powder.
  2. Add 2 tbsp ghee to the bowl, then rub the mixture with your hands until the dry ingredients absorb the ghee.
  3. Add 1½ cups milk to the bowl, then knead the mixture until the dough holds together.
  4. Spread the dough in a baking tray.
  5. Set the oven to its highest heat, top and bottom, then leave the tray in the oven for 10 minutes.
  6. Remove the tray from the oven after 10 minutes, then allow the dough to cool slightly.
  7. Cut the dough after removing it from the oven so that it cools quickly.
  8. Once cooled, grind the dough using a food processor, meat grinder, or your hands if no machine is available.
  9. Sift part of the ground mixture through a sieve over a tray or a wide work surface, then gather the remaining pieces.
  10. Grease the bottom of a baking tray with some ghee, then place a layer of the ground dough in the tray.
  11. Press the dough gently in the tray until it holds together and becomes one piece.
  12. Set the oven to 250 degrees, bottom heat only, then put the tray in the oven.
  13. After 5 minutes in the oven, turn the tray, then leave it to continue cooking until it dries out and the top turns blond.
  14. Prepare the syrup in a saucepan: add 1½ cups sugar with 1 cup water and 1 slice of lemon.
  15. Place the saucepan over low heat until the sugar dissolves and the syrup comes to a slight boil, then remove it from the heat and remove the lemon.
  16. Grind the cheese, then prepare it in a Tefal saucepan with ¾ cup water and 1 tablespoon flour.
  17. Place the cheese saucepan on the stove and stir until the cheese melts.
  18. Spread the melted cheese evenly over the dough in the tray.
  19. Put the tray in the oven, or serve it according to the method shown in the video after turning it, then pour the syrup over it immediately after baking.
