Orange Juice Without Bitterness

An orange juice recipe with lemon, vinegar, salt, and sugar. It relies on zesting the peels without the white pith, then soaking and straining them to remove bitterness, followed by blending the oranges and lemon juice with water, sugar, and vinegar for a sweet juice served cold.

A method for making orange juice taste sweet and not bitter.

Like a fresh orange drink or juice preparation.

Use ripe oranges and avoid squeezing too much of the bitter white pith.

Ingredients

  • 1 kg Oranges
  • 2 Lemons
  • 3 tablespoons Vinegar
  • ½ teaspoon Salt
  • 1½ cups Sugar

Instructions

  1. Zest the orange and lemon peels using a grater, taking care not to reach the white part of the peel.
  2. Put the grated orange and lemon peels in a bowl, then add the salt and hot boiling water and leave them for about 15 minutes.
  3. Peel the oranges, removing all of the white pith, then divide them into pieces.
  4. Peel the lemons and reserve them for juicing only.
  5. Strain the peel-and-water mixture into another bowl to remove the bitterness.
  6. Add the vinegar and sugar to the strained mixture and stir until the sugar partially dissolves.
  7. Put the orange pieces in an electric blender with a little cold water and blend until smooth.
  8. Strain the blended oranges and add the lemon juice.
  9. Add 2½ liters of water to the mixture and stir well.
  10. Serve the juice cold.
