Original Jallab Juice

Original Syrian jallab drink is made from soaked raisins blended with their soaking water, then boiled with grape molasses and sugar. Orange blossom water and rose water are added at the end of boiling. Chill thoroughly and serve cold; it can be garnished with almonds, with an optional step of scenting the pitcher with cinnamon and adding sparkling water or plain water when serving.

This is a sweet Middle Eastern jallab drink.

Like a chilled fruit-and-syrup drink with a dessert feel.

Jallab is usually served cold and often has a rich, sweet flavor.

Ingredients

  • 180 g / 1 cup Raisins
  • 380 g / 1¼ cups Grape molasses
  • 400 g / 2 cups Sugar
  • 1 liter Water
  • ½ cup Orange blossom water
  • ½ cup Rose water
  • 1 stick Cinnamon stick
  • almonds Almonds, for garnish

Instructions

  1. In a pot, wash the raisins thoroughly two or three times with water.
  2. In a pot, soak the raisins in 1 liter of water for 24 hours.
  3. In a blender, blend the soaked raisins with the soaking water until completely smooth.
  4. Using a strainer, strain the raisin mixture to obtain a clear liquid.
  5. In a pot, place the raisin mixture over heat slightly below medium and bring it to a boil for 20 to 25 minutes.
  6. In the pot, add the sugar when the mixture begins to boil, then stir until the sugar dissolves.
  7. In the pot, add the grape molasses once the sugar has dissolved, then stir until combined.
  8. In the pot, reduce the heat to half and let the mixture boil for 20 to 25 minutes, stirring and leaving a small gap in the lid.
  9. In the pot, add the orange blossom water and rose water after 15 minutes of boiling, then boil again for 5 to 10 minutes.
  10. In the pot, let the jallab cool completely; preferably leave it until the next day.
  11. In a pitcher or pot, place a cinnamon stick and burn it so that the smoky aroma is trapped inside the pitcher.
  12. In the pitcher, add the optional almonds, then pour in the jallab and top it with sparkling water or plain water when serving.
