
Pumpkin Stir-Fry with Mushrooms and Leeks

Ingredients

- 1 kg Pumpkin
- 2.5 tablespoons Ghee
- Salt
- Pepper
Instructions
- Peel the pumpkin in the pot or on the work surface, then remove its seeds.
- Cut the pumpkin on the preparation plate into medium-sized pieces so that it does not melt during cooking.
- Cut the mushrooms on the preparation plate into thick pieces if they are large.
- Cut the onion on the preparation plate into large or small pieces as desired; large pieces are preferred when using leeks.
- Prepare the leeks on the preparation plate in pieces suitable for cooking.
- Heat the pot over the heat, then add a little ghee.
- Fry the pumpkin in the pot with a pinch of salt until it is half-cooked or one-quarter cooked, then transfer it to a plate.
- Return the pot to the heat, then add the ghee.
- Add the meat to the pot and season it with salt and pepper until cooked.
- Add the onion to the pot over the meat and stir until it softens slightly.
- Add the remaining ghee to the pot, then add the leeks, mushrooms, salt, and pepper.
- Add the fried pumpkin to the pot as the final step so that it does not break down and retains its shape.
- Stir the dish in the pot once so the flavors combine, then serve hot.
