
Red Lentil Soup with Meat and Ghee

This version is not vegan because it includes meat and ghee. Expect a thick, comforting soup with a rich, savory taste.
Ingredients
- 400 g or 2 cups red lentils
- 2 medium onions onions
- 200 g ground or coarsely minced meat
- 1 tablespoon ghee
- may be used instead of ghee oil
- 1 teaspoon pepper
- 1.5 teaspoons salt
- 1 tablespoon safflower
- 2.5 liters hot water
- a little salt
- instead of water bone broth or meat broth
Instructions
- Place the ghee in a pot over the heat.
- Add the onions to the pot and add a little salt, until the onions soften.
- Add the meat to the pot and stir it with the onions.
- Transfer the meat and onion mixture to a larger pot.
- Add the lentils to the larger pot and lightly sauté them with the meat and onions.
- Add the hot water to the pot.
- Add the pepper to the pot.
- Add the safflower to the pot.
- Lower the heat under the pot and let the soup simmer gently.
- When the soup is ready and has thickened, check the salt.
- Blend the soup briefly with an immersion blender in the pot, or transfer it to a suitable container for blending, to reduce the coarseness.
- Serve the soup hot.
