Safouf Cake

Safouf is a Lebanese cake made without eggs, using milk, flour, semolina, sugar, turmeric, and baking powder, with ghee or vegetable oil. Vinegar and baking soda are added at the end. It is baked in a preheated 180-degree oven for 20 to 25 minutes, and the pan is greased with tahini, then garnished with raisins and peeled almonds or sesame seeds, and finished with sugar syrup or honey.

Ingredients

  • 3 cups Milk
  • 1½ cups Sugar
  • 1 cup Farikha flour (fine semolina)
  • 3 cups Flour
  • ½ tablespoon Turmeric
  • 10 grams (1 tablespoon) Baking powder
  • ½ cup Ghee or vegetable oil, with flavoring as desired
  • a little Vinegar
  • ¼ teaspoon Baking soda (sodium bicarbonate)
  • Tahini, for greasing the pan
  • Raisins
  • Peeled almonds or sesame seeds
  • Sugar syrup or honey
  • can be used instead of milk with the addition of powdered milk Water
  • with water when substituting Powdered milk
  • to flavor the vegetable oil Cardamom
  • to flavor the vegetable oil Anise
  • to flavor the vegetable oil Vanilla
  • to flavor the vegetable oil Orange zest
  • for finishing the top Sugar syrup

Instructions

  1. Preheat the oven to 180 degrees, with heat from above and below.
  2. In a bowl, mix the flour, fine semolina, sugar, turmeric, and baking powder.
  3. Add the ghee or vegetable oil to the bowl and stir the mixture well until the dry ingredients absorb it.
  4. Add the warm milk to the bowl and stir the mixture with a spoon or spatula until combined.
  5. In a glass, mix the vinegar and baking soda, then immediately add them to the bowl.
  6. Stir the mixture in the bowl well after adding the vinegar and baking soda until any lumps disappear.
  7. Grease a baking pan with tahini.
  8. Scatter the raisins across the bottom of the pan.
  9. Pour the mixture into the pan over the raisins.
  10. Place the pan in the oven for 20 to 25 minutes, or until cooked through and golden.
  11. Remove the pan from the oven and leave it until hot.
  12. Pour the sugar syrup or honey over the top while it is hot.
  13. Garnish the top with peeled almonds or sesame seeds.
