Shaabiyat with Two Fillings

The recipe is Shaabiyat pastries made with ready-made puff pastry and two fillings: ashta and walnuts. The walnut filling is made from hand-chopped walnuts with sugar, cinnamon, syrup, and butter until it holds together, then the pastry pieces are filled and sealed well. They are baked in a preheated oven, first at 170 with top and bottom heat on, then browned from above. After baking, cold syrup is poured over them while they are hot.

Ingredients

  • Ready-made puff pastry
  • Walnuts
  • Butter
  • 1½ tablespoons Sugar
  • Cinnamon
  • Syrup (simple syrup)
  • Ready-made ashta
  • instead of butter or together with butter Ghee

Instructions

  1. Preheat the oven to 200 degrees 15 minutes before starting.
  2. Prepare the first filling in a bowl, and hand-chop the walnuts with a knife instead of using a food processor if you want a coarse texture.
  3. Add a pinch of sugar, a little syrup, and a pinch of cinnamon to the bowl of walnuts, then add a little butter and mix the filling until it holds together.
  4. Prepare the work surface and grease it with a little ghee or butter.
  5. Open the ready-made puff pastry and join its pieces together.
  6. Brush the pastry with butter, then roll it out with a rolling pin until it becomes flaky.
  7. Cut the pastry into roughly equal pieces according to the desired size.
  8. Place the ready-made ashta on one piece of pastry, then seal it well so the ashta does not leak out in the oven.
  9. Grease the baking tray with ghee or butter, then place the Shaabiyat pieces in it.
  10. Put the walnut filling inside another piece of pastry, then seal it in the same way.
  11. Roll out the pieces into the shape you want, and they can be made smaller than the ashta pieces if you prefer.
  12. Place the tray in the oven on the lower rack first, then lower the oven temperature to 170 with top and bottom heat on.
  13. Once cooked on the bottom, move the tray to the upper rack in the oven to brown the tops.
  14. Remove the Shaabiyat from the oven and pour cold syrup over them while they are hot.
