Tibsiyah Meat Bake

This is a Turkish-style Tibsiyah kebab/meat tray bake: tomato, onion, peppers, and parsley are ground together, then mixed with lamb and spices, spread in an oven tray, and baked at high heat until cooked through and well browned on top. Serve hot with brown bread.

Ingredients

  • 900 grams lamb meat
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 tomato
  • 1 onion
  • quarter of a bunch parsley
  • 1 tsp salt
  • 1 tsp mixed spice
  • 1/2 tsp pepper
  • 1/2 tsp dried pepper
  • mentioned in the context without an amount fat

Instructions

  1. Preheat the oven to its highest temperature, with top and bottom heat, and position the tray slightly below the center.
  2. Prepare the tomato in a pot or over low heat by making light slits in the skin, then heating it for 20 seconds on one side and 20 seconds on the other side, until the skin is easy to remove.
  3. Leave the tomato to cool, then peel it.
  4. Chop the onion and peppers, then place them in a food processor with the tomato and parsley and grind them.
  5. Place the meat in a bowl, then add the ground vegetable mixture to the meat.
  6. Add the salt, mixed spice, pepper, and dried pepper to the meat in the bowl.
  7. Knead the meat well with the vegetables and spices by hand.
  8. Spread the meat mixture evenly in an oven tray.
  9. Decorate the oven tray with tomato fingers at the corners or over the top, as shown in the video.
  10. Put the tray in the oven and leave it for about half an hour, until cooked through and browned on top.
  11. Remove the tray from the oven and serve hot.
