Awwama and Luqaimat Doughnuts

A sweet made from fried dough balls, known as awwama or luqaimat.

These are small fried dough sweets, also known as awama or luqaimat.

Like bite-sized doughnuts or fritters soaked in syrup.

Keep the oil at a steady temperature so they cook evenly.

Ingredients

  • 3 cups sugar
  • 2 cups water
  • 4 pods cardamom
  • 2 slices lemon
  • 3 cups / 600 ml water
  • 4 cups / 450 g flour
  • 3 tbsp cornstarch
  • 15 g / 4 tsp yeast
  • 1 tbsp sugar
  • 5 tbsp cold sugar syrup
  • 1/4 tsp salt
  • for frying vegetable oil
  • mentioned in the chef's comments during frying oil

Instructions

  1. To prepare the sugar syrup, place the pot over the heat and add 3 cups sugar, 2 cups water, 4 cardamom pods, and 2 slices lemon. Leave the mixture to boil and turn into syrup.
  2. To prepare the dough, place 3 cups water, 4 cups flour, 3 tablespoons cornstarch, 15 g yeast, 1 tablespoon sugar, 5 tablespoons cold sugar syrup, and 1/4 teaspoon salt in a bowl.
  3. Mix the dough in the bowl until combined and suitable for awwama.
  4. Leave the dough to rise as required for its preparation in the bowl.
  5. Heat the vegetable oil in a frying pan or a pot for frying.
  6. Shape the dough and drop it into the hot oil in the pan in small batches.
  7. Fry the awwama until golden and cooked through in the pan.
  8. Remove the awwama from the pan and serve with the sugar syrup.
