Balouza Dessert

Balouza is a chilled dessert made with milk, orange juice, starch, sugar, and vanilla. Each mixture is cooked separately while stirring until thickened, then poured into a bowl in layers and chilled until set. It is then inverted and garnished with coconut.

A balouza-style dessert set and presented like a cake.

Like a molded milk pudding or custard dessert.

Let it fully set before unmolding so it holds its shape.

Ingredients

  • 4 cups Milk
  • 3 cups Orange juice
  • 7 tablespoons Starch
  • 9 tablespoons Sugar
  • 1 tablespoon Vanilla
  • for garnish, as desired Coconut

Instructions

  1. In a saucepan off the heat, mix the milk with the starch and sugar until they dissolve well.
  2. Place the milk saucepan over the heat, stirring continuously until the mixture thickens and begins to set.
  3. Add the vanilla to the milk saucepan at the final stage, continuing to stir.
  4. In another saucepan off the heat, mix the orange juice with the starch and sugar until well combined.
  5. Place the orange juice saucepan over the heat, stirring continuously until the mixture thickens and begins to set.
  6. Pour the hot milk mixture directly into the bowl.
  7. Pour the hot orange mixture into the center of the bowl over the milk mixture.
  8. Leave the bowl to cool outside the refrigerator for 1 hour, until the steam escapes.
  9. Place the bowl in the refrigerator for 4 to 5 hours or overnight, until set.
  10. Invert the balouza onto a serving plate.
  11. Garnish the top with coconut.
