
Saray Lokum Dessert
This is a Turkish Saray Lokum dessert recipe: a stovetop milk pudding made with milk, butter, flour, and sugar, flavored with vanilla after the heat is turned off, then poured over a layer of coconut or biscuits in a tray. Once cooled, it is topped with whipped cream Chantilly made with very cold milk or cold water, then sprinkled with crushed biscuits and served cold.

Chill well so it sets before cutting or serving.
Ingredients
- Milk
- Butter
- Flour
- Sugar
- Vanilla
- Coconut
- Biscuits
- Powdered cream Chantilly
Instructions
- In a pot over the heat, melt the butter completely.
- In the same pot, add the flour and stir it with the butter, lightly toasting the flour so that no floury taste remains.
- In the same pot, gradually add the milk, stirring quickly so that no lumps form.
- In the same pot, gradually add the sugar, stirring until it dissolves.
- In the same pot, continue stirring over the heat until the pudding begins to boil and bubbles appear, then turn off the heat.
- In a tray, make a layer of coconut or crushed biscuits, depending on what is available.
- In the pot after turning off the heat, add the vanilla and stir until it dissolves.
- In the tray, pour the pudding evenly over the layer of coconut or biscuits.
- Place the tray in the refrigerator for 1 to 2 hours, until cooled.
- In a bowl, whip the powdered cream Chantilly with 1 glass of very cold milk or water until a cream forms.
- Place the bowl of cream Chantilly in the refrigerator or freezer until chilled.
- In the tray, once the pudding has cooled, spread the layer of cream Chantilly over it.
- Sprinkle crushed biscuits over the top of the tray.
- Place the tray in the refrigerator or freezer for a little while, until set.
- Cut the dessert and serve it cold.
