
Bulgur with Tomatoes
A simple bulgur dish cooked with tomatoes.
A simple bulgur grain dish cooked with tomatoes.
Similar to a tomato rice pilaf, but made with bulgur.
Bulgur is a cracked wheat grain that cooks quickly and absorbs sauce well.
Ingredients
- 2 1/2 cups Coarse bulgur
- 2 tablespoons Tomato paste
- 1 tablespoon Red pepper paste
- 1 tablespoon Salt
- 1 teaspoon Black pepper
- 1 Medium onion
- 2 Tomatoes
- 1/2 cup Olive oil
- to taste Mixed bell peppers
- 5 cups Water
Instructions
- Finely chop the onion in the prep bowl, without making it too fine.
- Finely chop the mixed bell peppers in the prep bowl, or grate them, depending on what is available.
- Finely chop the tomatoes in the prep bowl, or grate them, depending on what is available.
- Place the olive oil in a pot or frying pan over the heat.
- Add the chopped onion to the pot or frying pan, along with the salt and black pepper, right away.
- Stir the onion in the pot or frying pan until it softens slightly.
- Add the chopped mixed bell peppers to the pot or frying pan and stir until softened.
- Add the chopped tomatoes to the pot or frying pan and stir the ingredients together.
- Cover the pot or frying pan and leave the vegetables over the heat for 10 to 12 minutes, until the ingredients meld together.
- Add the tomato paste and red pepper paste to the pot or frying pan and stir well.
- Add 5 cups of water to the pot.
- Wash the bulgur, then gradually add it to the pot while stirring.
- Taste the bulgur broth in the pot and adjust the salt if needed.
- Leave the pot over high heat until the water begins to boil.
- Reduce the heat under the pot to medium once the water boils.
- Cover the pot and let the bulgur cook until its water dries up and it is cooked through.
- Spoon the bulgur with tomatoes into a bowl, then invert it onto a serving plate.
- Serve the bulgur with tomatoes hot.
