Butter Grilled Chicken

The recipe uses a 1.5 kg chicken, cleaned with white vinegar, salt, and a little water, then dried thoroughly. A butter mixture is prepared with salt, ground ginger, white pepper, garlic, lemon zest, and Italian herbs. The butter mixture is stuffed under the chicken skin and the remainder is spread over the outside. The chicken is then positioned upright over a cake pan with seasoned potatoes and carrots underneath, and roasted in the oven at 180°C with a fan for about 1 hour and 15 minutes, until cooked through and browned. It is then basted with the butter and pan juices and served hot.

Ingredients

  • 1.5 kg chicken
  • a little white vinegar
  • a little salt
  • a little water
  • 200 g butter
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon white pepper
  • 6 cloves garlic
  • zest of 1 lemon lemon zest

Instructions

  1. Clean the chicken by removing the trimmings, neck, and unwanted parts with a knife.
  2. Scrape the chicken cavity with a knife to remove any residue that may cause an off smell.
  3. Place the chicken in a bowl or baking dish, then add white vinegar, salt, and a little water, and rub the chicken with this mixture.
  4. Rinse the chicken after cleaning it, then dry it thoroughly so that no liquid remains on it.
  5. Place the softened butter in a mixing bowl.
  6. Add 1 1/2 teaspoons salt, 1/4 teaspoon ground ginger, 1/4 teaspoon white pepper, 6 garlic cloves, the zest of 1 lemon, and a little Italian herbs to the mixing bowl.
  7. Blend the butter ingredients in the mixing bowl with a hand blender or blender until combined.
  8. Cut the potatoes and carrots into suitable pieces.
  9. Season the potatoes and carrots in a bowl or directly in the baking tray with salt and pepper only.
  10. Place some of the potatoes and carrots in a cake pan to create a base that raises the chicken above them.
  11. Gently lift the chicken skin with your hand, then stuff the butter mixture directly under the skin.
  12. Massage the butter mixture under the chicken skin so the butter spreads over the breast and the rest of the meat.
  13. Spread the remaining butter mixture over the outside of the chicken.
  14. Tuck the wings inward so they do not burn in the oven.
  15. Position the chicken upright over the cake pan filled with vegetables.
  16. Place the cake pan inside a larger baking tray to catch any fat and juices that may drip during roasting.
  17. Place the baking tray in an oven preheated to 180°C, using top and bottom heat with a fan if available.
  18. Leave the chicken in the oven until it cooks gently and develops color; the chef mentioned that the potatoes cooked for about 1 hour and 15 minutes with the chicken.
  19. Remove the chicken from the oven once cooked.
  20. Take the butter and juices collected in the baking tray and pour them over the chicken after removing it from the oven.
  21. Serve the chicken hot with the oven-cooked potatoes and carrots.
