
Chicken Enchilada
A baked chicken dish with tomatoes, peppers, onions, and warm spices, served with tortilla bread.
Like a spiced chicken tortilla casserole.
This version leans savory and gently spiced rather than very hot. The tortilla bread makes it feel hearty and filling.
Ingredients
- half a kilogram Chicken cutlets
- 1 1/2 cups Strained tomatoes
- Mixed-color bell peppers
- 1/2 teaspoon Ground cumin
- Salt
- 1 1/2 tablespoons Tomato paste
- Vegetable oil
- 1 medium onion Medium onion
- 1/2 teaspoon Dried coriander
- 1/2 teaspoon Smoked paprika
- 1 tablespoon Hot paprika
- 1/2 teaspoon Sugar
- 1 tablespoon Oregano or wild thyme
- 6 cloves Garlic cloves
- 1/4 teaspoon Garlic powder
- 1/2 teaspoon White pepper
- 1/2 teaspoon Ginger
- Tortilla bread
- Mozzarella cheese
- Parsley
Instructions
- In a small bowl, mix the cumin, salt, tomato paste, vegetable oil, chopped onion, dried coriander, smoked paprika, hot paprika, sugar, oregano, garlic, white pepper, ginger, and garlic powder.
- In a frying pan, heat 1/4 cup vegetable oil, then add the sliced onion and garlic.
- In the same pan, add some of the mixed spices and let the onion and garlic soften.
- In a suitable pot or frying pan, add the strained tomatoes, tomato molasses, and sugar to the onion and spice mixture.
- In the same pot or frying pan, let the sauce reduce over low heat.
- In another frying pan, fry the chicken cutlets over high heat until they take on color.
- In the same pan, add the mixed spices to the chicken.
- In the same pan, add the mixed-color bell peppers and do not let them cook through.
- In the same pan, leave the filling over low heat until it reduces together.
- In the same pan, optionally add mozzarella cheese to the filling.
- In a blender or food processor, blend the prepared sauce briefly.
- In a Pyrex baking dish, place a little of the sauce on the bottom.
- On each piece of tortilla bread, place a little sauce, then a little chicken, and roll it up.
- In the Pyrex baking dish, arrange the rolled tortilla bread over the sauce.
- In the Pyrex baking dish, distribute the sauce over, underneath, and between the rolls.
- In the Pyrex baking dish, distribute the mozzarella cheese evenly over the top.
- In the oven, preheat the oven to 180°C with top and bottom heat.
- In the oven, place the Pyrex baking dish on the upper rack or slightly above the middle for about 10 minutes, until the tortillas brown and the cheese melts.
