
Chicken Fatteh with Rice
A warm fatteh dish that combines chicken with rice, bread, and fatteh sauce.

Ingredients
- half a kilo Cooked rice with safflower, curry, or turmeric
- 1 kilo Boiled chicken
- Black pepper
- to taste Salt
- 5 cloves Crushed garlic
- a quarter cup Lemon juice
- 1 cup Tahini
- half a kilo or 2 cups Yogurt
- Toasted bread
- 2 cups Chicken stock
- for garnish Fried pine nuts and almonds

Instructions
- In a pot, boil the chicken in water with whichever flavorings you prefer from cardamom, ginger, pepper, cinnamon, and salt. You can add dry yellow seasoning, Maggi seasoning, turmeric, or curry to give the stock a yellow color.
- In the pot, boil the chicken until cooked, then remove it from the pot, take off the bones, and set the meat aside ready for assembling.
- In a pot, cook the rice using chicken stock instead of plain water, choosing the yellow color from safflower, curry, or turmeric.
- In a bowl, mix the yogurt with tahini, crushed garlic, salt, and lemon juice until the sauce is well combined.
- In the same bowl, add the lemon juice after the initial mixing, because the acidity makes the tahini thicker.
- In a frying pan or the oven, toast the bread until golden. You can also toast it in the microwave if you wish.
- On a serving platter, first arrange a layer of toasted bread, then spoon 2 tablespoons of the yogurt-tahini sauce over it.
- On the serving platter, distribute the chicken over the sauce layer.
- On the serving platter, add a layer of cooked rice over the chicken.
