Francisco Sandwich with Homemade Mayonnaise

A quick sandwich prepared with a mayonnaise sauce.

This is a quick sandwich made with a mayonnaise-style sauce.

Like a fast deli-style sandwich.

Prepare the mayo first so the sandwich can be assembled quickly.

Ingredients

  • 600 g chicken breasts
  • juice of 1/2 lemon lemon juice
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp vinegar
  • 3 tbsp vegetable oil
  • 1 egg
  • 1/2 tsp mustard
  • 1 tsp lemon juice
  • 1 tsp balsamic or white vinegar
  • 200 ml vegetable oil
  • 1 cup corn
  • 1 cup lettuce
  • 300 g kashkaval cheese
  • a little soy sauce
  • sesame samoon bread rolls
  • a little butter

Instructions

  1. Cut 600 g of chicken breasts on a cutting board into strips or thin fillets.
  2. Place the cut chicken in a mixing bowl, then add 1/2 tsp salt, 1/4 tsp white pepper, 1/2 tsp garlic powder, and 1/2 tsp onion powder.
  3. Add 2 tbsp vinegar, 3 tbsp vegetable oil, and the juice of 1/2 lemon to the mixing bowl, then toss the ingredients until the chicken pieces are coated in the marinade.
  4. Place 1 whole egg, 1/2 tsp mustard, 1/2 tsp salt, 1 tsp lemon juice, 1 tsp balsamic or white vinegar, and 200 ml vegetable oil in the hand-blender beaker or a narrow container.
  5. Lower the immersion blender to the bottom of the hand-blender beaker and switch it on without lifting it at first, until the mayonnaise begins to thicken.
  6. Tilt the immersion blender slightly inside the hand-blender beaker and continue blending, then gradually lift it until the mayonnaise is thick and creamy.
  7. Refrigerate the mayonnaise, if time allows, until it firms up.
  8. Heat a heavy pan over the heat until it is very hot.
  9. Add the marinated chicken pieces to the hot pan one at a time so they do not release their juices.
  10. Leave the chicken pieces in the pan on the first side for about 1 minute without moving, pressing, or covering them.
  11. Turn the chicken pieces to the second side until they take on color on both sides.
  12. Add a little butter to the pan with the chicken after browning it on both sides to make it juicier, then continue turning it briefly until cooked through.
  13. Remove the cooked chicken pieces from the pan.
  14. Split the sesame samoon bread rolls open on the work surface.
  15. Place the grated cheese inside the sesame samoon bread rolls.
  16. Place the cooked chicken over the cheese inside the sesame samoon bread rolls.
  17. Add the corn inside the sesame samoon bread rolls over the chicken.
  18. Close the sandwiches and place them in the sandwich press until the cheese melts inside the bread.
  19. Remove the sandwiches from the sandwich press, then spread the mayonnaise inside them from end to end.
  20. Add a little soy sauce inside the sandwiches over the mayonnaise.
  21. Add a little lettuce inside the sandwiches.
  22. Close the sandwiches, then cut and serve.
