
Chicken Onion Rings
This recipe is onion rings stuffed with minced or ground chicken, seasoned with cardamom, mixed spices, ginger, white pepper, pepper paste, and vinegar, then coated in flour, egg, and breadcrumbs and fried in hot oil. Mozzarella cheese is optional, and pepper paste can be replaced with paprika, according to the chef.

Ingredients
- 900 g Chicken breast fillets
- 4 onions Large onions
- three-quarters of a cup Flour
- 1 cup Breadcrumbs [fine cracker crumbs]
- for the filling Mozzarella cheese for the filling
- 2 Eggs
- quarter teaspoon Ground cardamom
- half teaspoon Mixed spices
- 1 teaspoon Salt
- half teaspoon Ginger
- half teaspoon White pepper
- 1 teaspoon Pepper paste
- 1 tablespoon White vinegar
- mentioned for frying Oil
- 2 tablespoons Oil
Instructions
- In a food processor, grind the chicken breasts until smooth, like a paste.
- On a cutting board, cut the onions into rounds while keeping the rings intact without cutting through one side.
- In a bowl, season the chicken with the listed spices, salt, pepper paste, and vinegar.
- On a plate, form the onion rings with the chicken filling; if desired, place a piece of mozzarella cheese inside the filling.
- In two separate plates, mix the flour with part of the spices, and beat the eggs with the salt and vinegar.
- Coat the stuffed onion rings first in flour, then in egg, then in breadcrumbs.
- In a frying pan with hot oil, fry the rings until browned and cooked through inside.
- Place the rings on a plate lined with paper towels after frying to drain the oil.
