Coconut Biscuits

Coconut biscuit recipe is an easy coconut biscuit made with egg whites, sugar, vanilla, coconut, and flour, with an optional pistachio garnish. Beat the egg whites with sugar and vanilla, then add the coconut followed by the flour until a dough forms; shape into discs and bake at 180°C until browned underneath and golden on top.

A simple baked coconut cookie or biscuit recipe.

Like soft coconut cookies.

Watch the baking time closely so the coconut stays golden, not dry.

Ingredients

  • 2 egg whites
  • 2 tablespoons flour
  • 135 g coconut
  • 100 g sugar
  • ½ teaspoon vanilla
  • 2 tablespoons all-purpose flour

Instructions

  1. In a bowl, beat the egg whites with the sugar and vanilla until the sugar has dissolved completely and the mixture is smooth.
  2. In the same bowl, add the coconut and stir well until the mixture comes together.
  3. In the same bowl, add the flour and mix until the dough comes together.
  4. Prepare a baking tray lined with parchment paper.
  5. Shape the dough into discs in your desired size, then place them on the tray, leaving space between the pieces.
  6. Garnish the tops with pistachios if desired.
  7. Place the tray on the middle rack of the oven at 180°C, using both top and bottom heat.
  8. Once the bottoms are browned, move the tray to the upper rack of the oven until the tops turn golden.
