Concentrated Chicken Seasoning Blend

A homemade chicken seasoning blend with a bold, concentrated flavor.

A homemade spice blend for chicken with a stronger, more concentrated flavor.

Like a chicken seasoning mix or spice rub.

Use a small amount at first, since concentrated blends can be very strong.

Ingredients

  • 1 bunch of parsley
  • 6 pieces carrots
  • 5 pieces medium onions
  • 1 kilogram chicken meat or fillet
  • 3 tablespoons whole black peppercorns
  • 20 leaves bay leaves
  • 4 tablespoons cornstarch
  • 3 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 2 tablespoons curry powder
  • 1 1/2 tablespoons turmeric
  • 3 tablespoons dried coriander
  • 1 1/2 tablespoons ground cardamom
  • 2 tablespoons paprika
  • 3 tablespoons salt
  • approximately 1 kilogram of net meat 1 whole chicken, deboned / chicken breasts as an alternative

Instructions

  1. In a food processor, cut the chicken meat into small pieces to make it easier to grind.
  2. On a cutting board, roughly chop the parsley.
  3. In a food processor, chop the carrots and onions together with the parsley, then grind the vegetables and chicken until they reach the fineness shown in the video.
  4. In a spice grinder, grind the whole black peppercorns with the bay leaves.
  5. In a bowl, mix the ground vegetables and ground chicken with the ground black pepper and bay leaves and the remaining spices, except for the cornstarch, salt, paprika, and cardamom, following the chef's order as stated.
  6. On a baking tray lined with parchment paper, spread the mixture in a thin layer, without any thickness.
  7. In the oven, heat to 160°C with top and bottom heat.
  8. In the oven, place the tray in the middle and begin drying the mixture for 10 to 15 minutes at a time, stirring occasionally.
  9. In the oven, continue drying until all moisture is gone and the mixture is dry.
  10. Let the mixture cool on a tray or suitable surface before the final grinding.
  11. In a spice grinder, grind the mixture after it has cooled.
  12. In a bowl, add the cornstarch to the ground spices and stir until combined and it absorbs any remaining moisture.
  13. Fill jars or storage containers with the finished seasoning blend for storage.
