Instructions

  1. In a bowl, mix the ground chicken breast with the salt, curry powder, cinnamon, ginger, garlic powder, onion powder, oregano, zest of half a lemon, and breadcrumbs.
  2. Add vegetable oil to the mixture while shaping so that it does not stick to your hands.
  3. Mix the kashkaval and cheddar cheeses for the filling; mortadella, corn, or mushrooms may be added as desired.
  4. Shape the chicken mixture in your hands into small, thin balls, then fill each ball with some of the filling and seal it well so that no air remains inside.
  5. Place the shaped chicken balls in the freezer to firm up before coating and frying.
  6. For the coating, prepare a bowl with the flour, milk, panko breadcrumbs, and egg, along with a little salt and a little white pepper.
  7. Dip each chicken ball first in flour, then in the milk-and-egg mixture, then in the panko breadcrumbs.
  8. Arrange the coated balls on a plate, then return them to the freezer to firm up further before frying.
  9. In a bowl, mix the mustard, mayonnaise, ketchup, chili sauce, honey, and pickle brine to make the sauce.
  10. Heat the vegetable oil in a frying pan over approximately medium heat, because oil that is too hot will burn the balls on the outside before the cheese melts inside.
  11. Fry the chicken balls in the oil until golden, cooked through, and the cheese has melted inside.
  12. Serve the chicken balls hot with the sauce.
