
Date Molasses
A thick, sweet syrup made by cooking dates with water, used as a natural sweetener or as a base for some drinks.

The finished syrup is usually concentrated and rich. Strain it if you want a smoother texture.
Ingredients
- 1 kg Dates
- 1/2 teaspoon Salt
- 1 1/2 liters Hot water
Instructions
- In a pot over the heat, heat 1 1/2 liters of hot water until boiling.
- In the same pot, add 1 kg of dates to the boiling water and stir until the dates are completely submerged.
- In the pot over high heat, let the dates and water boil for 30 minutes, stirring occasionally and skimming off the foam as it appears.
- In the pot over the heat, reduce the heat to low after the first 30 minutes.
- In the pot over the heat, add 1/2 teaspoon of salt after 30 minutes of boiling.
- In the pot over the heat, leave the mixture for an additional 5 minutes after adding the salt.
- In a strainer lined with a bag or fine cheesecloth, strain the mixture well to remove impurities.
- In the pot over the heat, return the strained liquid to a boil for another 30 minutes over medium heat, removing any foam that appears.
- In another pot, or in the same pot after straining, leave the date molasses to cool.
- In a bowl, test the consistency of the date molasses after it has cooled by drawing a line through it; if the line does not immediately spread, it is ready.
- In jars, pour in the date molasses after it has cooled completely.
