Doughnuts

This recipe is for homemade doughnuts made with flour, butter, eggs, vanilla, salt, yeast, sugar, and milk. The ingredients are kneaded in a stand mixer, then the dough is left to rise for 1 hour. It is rolled out, cut into circles, and left for another 25 minutes, then fried in a pan at 160 or just below medium heat until golden. After draining, decorate with chocolate or sugar. The chef says this quantity makes about 15 pieces of this size.

Ingredients

  • 650 g Flour
  • 100 g Butter
  • 2 medium eggs Eggs
  • 1 tablespoon Vanilla
  • 1 teaspoon Salt
  • 1 tablespoon Yeast
  • 40 g Sugar
  • 250 ml Milk
  • for decoration Brown chocolate
  • a little Oil or butter for greasing the bowl
  • to cover the pieces Damp cloth
  • to drain the oil Kitchen paper towels

Instructions

  1. Place the liquid ingredients in the stand mixer, starting with the slightly warm milk, then the butter.
  2. Add the sugar and yeast to the stand mixer with the liquid ingredients.
  3. Mix the salt and vanilla together, then add them over the liquid ingredients.
  4. Mix the dough in the stand mixer for the first 2 minutes on a low speed, then increase the speed until it comes together and becomes smooth.
  5. Shape the dough into a ball and place it in a bowl greased with a little butter or a little oil, then grease its surface as well.
  6. Cover the bowl and leave the dough for a full hour until it doubles in size.
  7. Roll out the dough on a surface dusted with a little flour, preserving the bubbles inside it and the thickness of the dough.
  8. Cut the dough with a round cutter, keeping the circular shape, then cut out the center with a smaller cutter.
  9. Place the pieces on parchment paper, then arrange them on the tray.
  10. Cover the tray with a damp cloth and leave the pieces for about 25 minutes to rise a second time.
  11. Heat the pan to 160, or to just below medium heat if a temperature-controlled pan is not available.
  12. Carefully lower the doughnut pieces into the pan together with the parchment paper so their shape does not change.
  13. Remove the parchment paper after placing the pieces in the pan.
  14. Fry the pieces until golden on both sides; this takes about 4 minutes.
  15. Remove the pieces from the pan and place them on a tray lined with kitchen paper towels to drain the oil.
  16. Decorate the doughnuts with chocolate or sugar, as desired.
  17. After decorating, place the doughnuts in the refrigerator or freezer for a short time until the chocolate sets.
